BUSY-DAY CHICKEN AND DUMPLINGS | |
1 (cooked) chicken in water to cover 1/4 c. onion, chopped 1 carrot, diced 2 lg. potatoes, diced 1 pkg. favorite frozen vegetables (peas, corn, green beans) 1 can refrigerated biscuits 2 c. cooked noodles or rice, optional 1/2 tsp. salt 1/4 tsp. pepper Cook the onion, carrot and potatoes until done, but not mushy in a small amount of water. Add salt and pepper. Stir into large kettle with cut up chicken, after discarding fat, bones and skin, alone with all liquid. Bring to boil then add frozen vegetables and cook just until tender. Place 10 biscuits on top of soup, cover, cook until biscuits are steamed through and firm. May be served over cooked rice or noodles, if desired. |
