PEAR MINCEMEAT 
7 lbs. fresh pears, peeled, cored, and cut into eighths
2 lemons, unpeeled and cut into eights
2 oranges, unpeeled and cut into eights
2 c. raisins
1/2 c. vinegar
6 c. sugar
1 tbsp. nutmeg
1 tbsp. salt
1 tbsp. allspice
1 tbsp. cloves
1 tbsp. cinnamon

Put pears, lemons, oranges and raisins through food processor or food grinder. Combine with remaining ingredients in a 5 quart Dutch oven. Bring to a boil; reduce heat and simmer, uncovered, for 30 minutes. Pour hot mixture into hot sterilized jars. Put on lids and screw bands tights. Process in boiling water bath for 25 minutes or can be cooled and frozen in freezer containers. Makes about 8 pints.
