LEBANESE BROWN RICE TABOULI | |
1 c. short grain brown rice 2 c. water 1/4 c. olive oil 1 tsp. soy sauce 2 tbsp. lemon juice Pepper to taste 1 green onion, minced 1 tbsp. parsley, minced Bring the rice and water to a boil and simmer until fluffy, about 45 minutes. Set aside and cool completely. In a small bowl, whisk together the olive oil, soy sauce, lemon juice and pepper. Pour this liquid over the cooled rice. Top with minced green onion and parsley and toss until completely mixed. Chill 1 hour and serve. Serves 4. |
