LEBANESE BROWN RICE TABOULI 
1 c. short grain brown rice
2 c. water
1/4 c. olive oil
1 tsp. soy sauce
2 tbsp. lemon juice
Pepper to taste
1 green onion, minced
1 tbsp. parsley, minced

Bring the rice and water to a boil and simmer until fluffy, about 45 minutes. Set aside and cool completely. In a small bowl, whisk together the olive oil, soy sauce, lemon juice and pepper. Pour this liquid over the cooled rice. Top with minced green onion and parsley and toss until completely mixed. Chill 1 hour and serve. Serves 4.

One TABLESPOON minced parsley for this much rice? Surely you mean at least 1/2 cup! And if possible another 1/8 cup fresh minced mint leaves! And a lot more onion....this recipe is too heavy on the rice and oil in proportion to the flavor and nutrition ingredients!

For this much rice, kick up the veggies...WAY up. Try at least 1/2 cup parsley, 1/8 cup finely minced onion and 1/8 to 1/4 cup minced really fresh mint if available.
