Tart: jam, (strawberry or your choice) amount as needed 1/2 c. butter 1/2 c. sugar 1 egg, beaten 1/2 c. flour 1/4 tsp. salt 1 tsp. almond extract Mix all ingredients together, except jam. Drop 1/2 teaspoonful jam in tart pan and cover with a good Tablespoon of the ingredient mixture. Bake at 400°F for 20 minutes. Frost with White Frosting or your personal choice. Butter Frosting: 3 tbsp. shortening 1/2 tsp. vanilla, (almond extract may be used instead) Few grains salt 2 c. sifted confectioners sugar 2 to 2 1/2 tbsp. warm cream or milk 1 egg yolk, (for extra richness, if desired) Cream shortening; beat in vanilla and salt, alternately with warm cream or milk. Beat until smooth and of-spreading consistency. Add more confectioners sugar or milk, if necessary. An egg yolk may be added for extra richness. This frosts 1 1/2 dozen medium-size cupcakes or 24 to 30 tarts or an 8-inch or 9-inch square cake or pan of squares. |
