OATMEAL - RAISIN COOKIES 
1 c. raisins (cover with water, simmer until tender)
7 tbsp. hot raisin liquid from the above

Dissolve 1 teaspoon baking soda in the above liquid, set aside to cool. Cream together: 1 c. white sugar 2 eggs 1 tsp. vanilla

Sift: 1 scant tsp. salt 1 tsp. cinnamon

Drain raisins after the 7 tablespoons liquid have been taken out. Add dry ingredients, alternately, with the liquid and soda. Lastly, add 2 1/2 cups dry oatmeal, raisins and nutmeats. Chill dough before dropping by spoon onto greased sheet. Bake 10 minutes at 350 degrees. Yield: approximately 5 dozen.
