PINK ARTIC FREEZE 
2 (3 oz.) pkgs. cream cheese, softened
2 tbsp. sugar
2 tbsp. mayonnaise
1 (1 lb.) can jellied cranberry sauce
1 c. crushed pineapple, drained
1/2 c. pecans, chopped
1/2 c. heavy cream, whipped
Shredded lettuce

Cream together cheese and sugar. Stir in mayonnaise. Fold in cranberry sauce, pineapple, nuts and whipped cream, separately and thoroughly. Turn into an 8 x 8 inch square pan. Freeze until firm. Cut in 3 inch squares. Serve on shredded lettuce. Better if it sits at room temperature for approximately 5 minutes before serving.

This is a salad for special occasions. Great with turkey. Can be frozen as much as a week. Yields 9 portions.
