FRIKADELLAR (Danish Meatballs) | |
1 lb. ground beef 1/2-3/4 pkg. onion soup 1 c. fine dry bread crumbs 3/4 c. milk 3/4 c. tomato juice 1 egg, beaten 1 scant tsp. salt 1/2 tsp. pepper 2 oz. Danish bleu cheese 6 tbsp. butter 2 tbsp. flour 1 tsp. chicken seasoned stock base 1 c. sour cream Combine meat, onion soup and bread crumbs. Stir in milk, eggs and seasonings; beat until light. Cut bleu cheese into 1/4 inch cubes. With wet hands put 1/4 cup meat mixture around each cube and shake into egg-like ovals. Melt butter and brown Frikadellar slowly on all sides. Remove meatballs to heated serving dish. Stir flour into pan drippings and cook until golden, adding any excess cheese. Add chicken stock base and sour cream. Simmer until thickened and smooth. Pour over meat balls. May be made ahead of time. |
