COCONUT BREAD 
3 c. flour
1 1/2 c. sugar
1/2 lb. raisins or currants
1/4 lb. butter
1 tsp. mixed spice
1 1/2 c. milk
4 tsp. baking powder
1/4 tsp. grated lime
2 lg. eggs
1 sm. coconut

Break coconut and grate fine. In large mixing bowl, add the flour. Make a hole in center of flour; add all the dry ingredients including coconut.

Beat the eggs. Add butter and eggs to flour mixture. Add milk gradually. Mix all ingredients with hand until thoroughly mixed. Dough will be stiff. Divide mixture and put in greased loaf pans. Bake for 1 hour or until brown at 350 degrees. While still hot, pour honey or syrup over loaves and sprinkle with a little sugar. Makes 2 large or 4 small loaves.
