FISH FILLETS ITALIAN 
1 lb. fish fillets (cod, flounder, perch or sole)
butter
Salt and pepper
1 tbsp. chopped parsley
1 tsp. basil
1/4 tsp. oregano
1 med. onion, sliced
1 can (8 oz.) tomato, sliced
1 tbsp. butter, melted
1/4 c. dry bread crumbs
1/4 c. grated Cheddar cheese

Brush fillets with butter. Season with salt and pepper to taste, and with parsley, basil, and oregano. Roll up fillets.

Grease an 8 x 8 baking dish. Lay slices of onion on bottom of dish. Place rolled fillets, seam side down, on top of onions. Pour tomato sauce over fillets.

Combine melted butter, bread crumbs, and cheese. Sprinkle on fillets. Bake at 400 degrees for 20 minutes or until fish flakes easily with a fork. Makes 4 servings.
