PORK - TOMATO CASSEROLE 
1 (No. 2) can tomatoes
1/2 c. chopped onion
1 tsp. salt
1 (6 oz.) pkg. macaroni, cooked
2 tsp. parsley, chopped
1 c. chopped celery
1/2 c. chopped green pepper
1 1/2 c. cooked pork, cut in bite size pieces or lean beef roast
1 c. shredded hoop cheese

Combine tomatoes, celery, onion, green pepper, and seasonings; simmer 30 minutes. Add macaroni, meat, chopped parsley, and 3/4 cup cheese. Pour into 2 quart greased casserole. Bake at 325 degrees for 1 hour. Top with more cheese during last 5 minutes of baking. Bake, covered, until last 5 minutes. May garnish with sprigs of parsley. Yield: 8 servings.
