CRAB SEAFOOD QUICHE 
2 tbsp. chopped onions
2 tbsp. butter
6-8 oz. fresh crab
2 tbsp. Madeira wine
3 eggs
1 c. whipping cream
1 tbsp. tomato paste
1/4 tsp. salt
Pepper
1/4 c. grated Swiss cheese

Saute onion in butter 2 minutes. Add crab and stir 1 minute. Add wine and stir 1 minute. In bowl beat the eggs with whipping cream, tomato paste, salt and pepper. Pour into partially baked crust. Sprinkle with grated Swiss cheese. Bake at 350 degrees for 30 minutes or until puffed and brown.
