1 turkey carcass
3 lg. onions, chopped fine
2 lg. carrots, chopped fine
1 c. butter
1 pt. half & half
1/2 tsp. poultry seasoning, if desired
4 qt. water
3 stalks celery, chopped fine
1/4 c. uncooked long grain rice
1 1/2 c. flour
3 c. diced cooked turkey
Salt & pepper to taste
