CHERRY COFFEE CAKE 
2 c. flour
4 eggs
1/2 tsp. salt
1 1/2 tsp. almond extract
1 1/2 c. sugar
1 stick softened butter
1/4 c. oil
1 lg. can cherry pie filling
(Any other fruit can be substituted)

Lightly grease 9 x 13 inch pan. Mix all ingredients together except the pie filling. Pour 2/3 of batter into cake pan. Top with pie filling. Dollop rest of mixture over fruit. Bake at 350 degrees for 35-40 minutes. While still warm, drizzle with glaze.

GLAZE:

1 1/2 c. powdered sugar
1 1/2 tbsp. almond extract (or Amaretto)

Add enough warm water to make smooth.
