TURTLE SOUP 
2 lbs. turtle meat (or mock turtle)
2 lg. onions, chopped fine
1 tsp. thyme
1/4 tsp. allspice
1 lg. can tomatoes (whole)
1 doz. eggs
3 lg. cooking spoons plain flour
3 lg. cooking spoons Wesson oil
3 qts. water (about)
3 lemons
Parsley, green onion, bay leaf to taste

Brown flour in Wesson oil. Add onions and parsley. Put turtle meat in 2 cups of hot water and let simmer down. Add tomatoes, spices, browned flour and onions to turtle meat.

Boil eggs until hard. Simmer soup for 2 to 3 hours. About 5 minutes before soup is finished, add chopped hard cooked eggs.
