MY MOTHER'S PERFECT PEANUT BRITTLE | |
2 c. sugar 1/4 c. water 1/8 tsp. salt 3/4 c. dark Karo syrup 2 1/2 c. raw peanuts 1 1/4 tsp. baking soda Prepare two greased cookie sheets, or use marble slab. Mix all ingredients except peanuts and soda in heavy pan. Cook, stirring constantly, until mixture starts to boil. Add peanuts and continue cooking and stirring until it reaches 295 degrees. Remove from heat and add soda. Mixture will foam and turn a lighter color. Pour quickly onto greased cookie sheets or slab. As mixture cools, slip knife under the edges and pull out as thin as possible. Cool. Break into pieces and store in a tight container. |
