MIZ MARY'S PEANUT BRITTLE | |
2 c. sugar 1/2 c. white corn syrup 1/4 c. boiling water 2 c. raw peanuts (with the red hulls on) 1 tsp. baking soda Combine sugar, syrup and water in heavy iron pot. When it starts to boil, add peanuts. Use medium heat throughout cooking. Cook until peanuts start popping and smell parched, approximately 20 minutes. Remove from heat, add baking soda. Stir quickly and pour on large buttered cookie sheet. Do not beat mixture. When cool, break in pieces. I use waxed paper spread on the counter top or on the table rather than a cookie sheet. |
