PLAIN GREASELESS GRIDDLE CAKES 
4 tsp. baking powder
2 c. flour
2 tbsp. sugar (opt.)
1/2 tsp. salt
1 3/4 c. milk
2 eggs, beaten
2 tbsp. melted butter

Mix dry ingredients. Add milk and melted butter to beaten eggs. Combine the 2 mixtures. Bake over medium heat at 425 degrees for about 1 minute. Yield: 18 cakes.
