CHICKEN REUBEN 
4 chicken breasts, split and boned (8 pieces)
1/4 tsp. salt
1 (16 oz.) jar sauerkraut, drained
1 1/4 c. bottled Thousand Island dressing
1 1/8 tsp. pepper
1 tbsp. chopped parsley
4 slices (about 4 x 6 each) Swiss cheese

Place chicken in greased pan. Sprinkle with salt and pepper. Place sauerkraut over chicken. Top with Swiss cheese. Spread Thousand Island dressing over top. Cover with foil and bake at 325 degrees for 1 1/2 hours. Sprinkle with parsley. Serves 6-8.
