1 1/4 c. light brown sugar 1 tbsp. dark corn syrup 3/4 c. light cream or evaporated milk Dash of salt 1 tbsp. butter 1/2 tbsp. vanilla 1 c. broken pecans or black walnut meats In saucepan mix sugar, corn syrup, cream and add salt. Stir over low heat until sugar dissolves and mixture boils. Cook until candy makes a soft ball when dropped into cold water. Or the thermometer registers 236 degrees. Add butter, cool mixture to lukewarm, stir in vanilla and beat until it becomes creamy. Stir in nut meats and cut candy into squares when cold. |
