CAULIFLOWER A LA NORWEGIAN 
1 head cauliflower
1 lb. cooked shrimp
2 c. cheese sauce
Cooked whole or halved carrots
Cooked whole green beans
Parsley for garnish

Prepare 2 cups cheese sauce by melting 3 tablespoons butter in saucepan; add 4 tablespoons flour and stir until blended. Add 2 cups milk, continue stirring and cooking until sauce boils. Season with 1/2 teaspoon salt and pepper (more if needed). Add 1 cup grated Cheddar cheese; add cooked shrimp.

Trim leaves from stalk of cauliflower, leaving about 1 inch of stem for support. Steam, tightly covered, using enough water to support stem but not touching head. Cook until just tender, 15-25 minutes, depending upon size of head.

Meanwhile, cook whole string beans until just tender. Also cook carrots whole or cut in half lengthwise and cook just until tender in a small amount of salted water.

Put cauliflower in center of platter. Put the other vegetables alternately around the platter, then pour the shrimp sauce over the cauliflower.
