SWEET POTATOES 
2 or 3 lbs. sweet potatoes or yams, peeled and cut in quarters
Water
2 tbsp. butter
1 c. maple syrup

Place potatoes in a saucepan and cover with water. Cover and cook until potatoes are tender when tested with a fork. Remove from heat and drain. Pour the syrup over the potatoes and dot with the butter. Warm in a slow oven (300 degrees F.) for 15 minutes and serve.
