CHOCOLATE MOCHA CHEESECAKE 
3 (8 oz.) pkgs. cream cheese
1 c. sour cream
2 eggs
1 c. chocolate chips, melted
1 tbsp. coffee
1 tsp. vanilla
1/2 c. Kahlua
1 c. sugar (or 3/4 c. honey)

Beat cream cheese and sour cream until smooth. Beat in eggs and sugar. Beat in remaining ingredients. Bake at 325 degrees for about 1 hour. Cool, then de-pan.
