SHREDDED YAMS 
2 lb. sweet potatoes
1 gal. water
1 tbsp. salt
1 c. sugar
1/2 c. white corn syrup
1/2 c. water
1/4 c. butter
1 c. pineapple juice

Preheat oven to 350 degrees. Peel and shred potatoes (yams) in gallon of water. Add salt. Drain and wash well. Place in baking dish 11 1/2 x 7 1/2 inches.

Mix sugar, syrup and 1/2 cup water; cook until simple syrup. Add butter. Pour pineapple juice over potatoes, then syrup. Cook 35 minutes or until they are transparent. Serves 12. (This is a famous recipe at the New Perry Hotel Dining Room in Perry, Georgia.)
