SWEET AND SOUR BEETS 
1 c. cider vinegar
1/2 c. water or beet juice
1/2 c. sugar
4 beets, cooked and sliced 1/4 in.

Boil sugar, vinegar and water for 1 minute. Add sliced beets (may use canned sliced beets). Let stand until cool. May be served in salad or as a side vegetable.
