CREAM OF SPINACH SOUP 
6 slices crumbled bacon
2 tbsp. flour
2 tbsp. bacon drippings
1 1/2 c. milk
1 pkg. frozen chopped spinach
3 bouillon cubes
1/2 tsp. salt
Pepper to taste
1/2 c. sour cream

Broil bacon until crisp; cool and crumble. Meanwhile, put bacon drippings in a 1 quart pan or larger and add flour; mix well and add milk. Add frozen chopped spinach and continue heating, stirring occasionally. Add seasonings and bacon and simmer for a few minutes. Add sour cream just before serving. Top with croutons or additional bacon crumbs. Makes about 3 cups.
