QUAKER'S BET OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt (opt.)
1 tsp. cinnamon (opt.)
1/4 tsp. nutmeg (opt.)
3 c. Quaker Oats (quick, old fashioned uncooked)

Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats, drop by rounded tablespoons onto ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes for chewy cookie; 10 to 11 minutes for crisp cookie. Cool 1 minute on cookie sheet, remove and keep tightly covered. Makes 4 1/2 dozen cookies.
