NORWEGIAN FRUIT SOUP 
1/2 c. pearl tapioca
2 c. apple juice
1 pkg. (12 oz.) mixed dried fruit, cut up
1 tsp. grated orange peel
1/4 c. orange juice
6 c. water
3/4 c. sugar (brown or granulated
1 c. raisins
1 cinnamon stick
1 tsp. grated lemon peel
2 tbsp. lemon juice

Soak tapioca at least 2 hours, drain. Combine with next ingredients. Simmer until fruit is tender and tapioca is clear, 2 to 3 hours. Stir occasionally. Serve warm or cold, plain or with whipped cream. If too thick, add some water. Makes 2 quarts.
