COLLARD GREENS 
1 lb. smoked turkey wings or ham hocks
1 1/2 qts. water
1 to 2 hot pepper or 1 tsp. crushed pepper
1 tsp. sugar
4 lbs. collard greens
1 sm. green pepper
2 tbsp. butter
Salt to taste (optional)

Cut and wash greens. Soak in salt about 1 hour, then repeat the same method. Then put in pot with the season meat, add ingredients on slow flame. Cook until greens are tender.
