COLLARD GREENS WITH SMOKED
TURKEY
 
1 lb. smoked turkey parts
1-1/2 qt. water
1 or 2 pepper pods
3 cloves minced garlic
4 lbs. fresh collards
1 med. onion
2 stalks celery
1 sm. green pepper
1 tbsp. sugar
1 tbsp. veg. or olive oil
Salt & pepper to taste

Place turkey in Dutch oven. Add water, pepper pods and garlic. Cover; bring to boil. Reduce heat to low and simmer 30 minutes. Take washed and cleaned greens, sliced to own liking along with celery, onion, green pepper, sugar, oil and seasonings. Cook about 1/2 hour or until greens are done.
