MEXICAN CHICKEN 
4 large chicken breasts, filleted
2 cans cream of chicken soup
1 can Ro-Tel chopped tomatoes
1 c. chopped bell pepper
1 c. chopped onion
1/2 tbsp. garlic powder
1/2 tbsp. chili powder
1 c. grated sharp Cheddar cheese
1 large bag regular flavor Doritos

Boil chicken and cut into small pieces. Mix together soup, Ro-Tel, bell pepper, onion, garlic, chili powder and 1/2 cup cheese. Spray a large Pyrex pan with Pam. Line bottom with 1/2 cup crushed Doritos. Place chicken pieces on top. Pour in mixed ingredients and bake at 350°F for 30 minutes. Pour in remaining Doritos and cheese over top and return to oven until cheese melts.
