MEXICAN CHICKEN CASSEROLE 
4 chicken breasts, cooked and cut into bite size pieces
1 onion, chopped and cooked in butter
1 (8 oz.) Doritos, broken
1/2 lb. Velveeta cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1 can mild Ro-Tel
3/4 c. chicken broth

Heat together cheese, soups, Ro-Tel and onions. After cheese melts, add broken chips and chicken. Pour into greased casserole.

Bake at 350°F for 30 minutes.

Makes a large casserole dish. Serve with salad and garlic bread.
