GIANT WALNUT MUFFINS 
2 tbsp. quick oats
2 tbsp. warm water
1/3 c. flour
2 tbsp. sugar
1/2 tsp. baking powder
1/8 tsp. cinnamon
Dash of salt
1 beaten egg
1 tbsp. oil
1 tbsp. milk
3 tbsp. nuts, toasted
2 tbsp. raisins
2 tsp. flour
1 tsp. brown sugar
1 tsp. butter

In small bowl, put oats and water. Let set for 5 minutes. In another bowl, put the next 5 ingredients. Stir next 3 ingredients into oats. Add to dry ingredients. Stir just until moist. Fold in 2 tablespoons nuts and the raisins. Pour into greased pan. Mix the last 3 ingredients and the other 1 tablespoon nuts. Sprinkle on top. Bake at 350 degrees for 20 to 25 minutes or done. Let stand 5 minutes. Serve warm. Serves 2.
