MARIE BARREA'S OLD FASHIONED
POTATO SALAD
 
5 lbs. peeled, chunky potatoes, boiled, yet firm, cooled
9 hard-boiled eggs, chopped, cooled
1 lg. onion, minced
2 stalks celery, diced
3 carrots, boiled, yet firm, diced
1 red pepper, diced, sm.
1 yellow pepper, diced, sm.
1 sm. bottle Russian Thousand Island dressing
Mayonnaise
Salt (opt.)

Don't overcook any items, then drain well and cool. Add mayonnaise to potatoes and carrots. Then add onions and then the eggs, celery and peppers. Mix slowly with a wooden spoon and then add dressing. Let stand in refrigerator for 24 hours for best taste.
