OLD FASHIONED POTATO SALAD 
1 c. diet mayonnaise
1/4 c. vinegar
2 tbsp. prepared mustard
1 tbsp. salt (opt.)
1/2 tsp. paprika
2 qts. diced (about 4 lbs.) cooked potatoes (may substitute shells etc. for potatoes)
1/2 c. chopped celery
1/2 c. coarsely shredded carrot
1/2 c. chopped green peppers
1/4 c. chopped onion
2 tbsp. chopped pimento
Can add hard-boiled eggs - 2 if desired

In large bowl, mix together mayonnaise, vinegar, mustard, salt and paprika. Add remaining ingredients and toss well. Chill until ready to serve. Makes 12 servings. One serving equals 1 bread unit and 1 fat unit. Make in plenty of time, as it doesn't taste too good warm. At least 2 to 3 hours ahead, if possible. Very good!
