SPICY LASAGNA ROLLS 
1 (10 oz.) pkg. chopped spinach
1 c. cottage cheese
2 eggs, slightly beaten
1 tsp. instant minced onion
3/4 tsp. salt
1/2 tsp. Italian seasoning
7 lasagna noodles, cooked
1/2 tsp. nutmeg
3/4 lb. Italian sausage, cooked
1/2 c. Parmesan cheese
1 (6 oz.) can tomato paste
3/4 c. dry white wine
1/2 c. water
1 clove garlic, crushed

Thaw and press liquid from spinach. Combine with cottage cheese, eggs, onion, salt, nutmeg, drained sausage, and 1/4 cup Parmesan cheese. Blend together tomato paste, wine, water and seasoning. Pour 1/2 wine mixture in 2 1/2 quart casserole. Spread 1/4 cup sausage mixture on each lasagna noodle. Roll up jelly roll fashion. Stand rolls in dish. Pour remaining wine mixture over noodles. Pour 1/4 cup Parmesan cheese on top. Cover. Microwave on high power 10 minutes, rotating after 5 minutes. Microwave at high power 2 more minutes. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
