CHINESE FRIED RICE 
1/2 c. finely diced chicken
2 tbsp. salad oil
1 (3 oz.) broiled sliced mushrooms, drained
4 c. chilled cooked rice
1 tbsp. soy sauce
1 well beaten egg

Brown meat in hot oil add mushrooms, rice, onion and soy sauce. Continue to fry over low heat 10 minutes, stirring occasionally. Add the well beaten egg and continue to stir fry for 2-3 minutes or until egg sets. Add additional soy sauce if prefer a darker color.
