PEACHES AND CREAM FRENCH TOAST | |
6 slices French or Italian bread, cut diagonally 3/4-inch thick 3 eggs 1 c. light cream 2 tbsp. peach preserves 1/2 tsp. nutmeg 3 tbsp. melted butter 3 c. fresh, peeled, sliced peaches confectioners sugar Arrange bread in a single layer in a baking pan. Combine eggs, cream, peach preserves and nutmeg. Beat until smooth and pour over the bread. Turn the slices to coat evenly. Cover and refrigerate overnight. To cook, melt the butter in a skillet or grill. Sauté the bread slices until golden brown, about 5 minutes on each side. Top with fresh peaches and sprinkle with confectioners sugar. Serves 3 to 4. |
