EGGPLANT CASSEROLE 
Brown 1 pound ground beef with instant onion or regular onion, chopped. Peel and slice 1 eggplant. Dip in flour and saute in oil until brown and tender.

In casserole, put layer of meat first, then eggplant, season with salt, pepper, and oregano. Pour a 15 1/2 oz. jar Ragu spaghetti sauce over each layer. (1 jar for whole recipe). Sprinkle with 1 cup grated Mozzarella cheese. Bake at 350 degrees until bubbly.
