POTATO PANCAKES WITH SOUR CREAM 
4 med. potatoes, peeled and grated
1 onion grated
1 egg, lightly beaten
1/2 tsp. baking soda
4 to 6 tbsp. butter
2 c. sour cream

Press potatoes with a paper towel to remove as much liquid as possible in large bowl stir potatoes, onions and egg until well mixed. Blend in salt and soda. In large heavy skillet heat 1 tbsp. of butter until it sizzles. Drop batter by heaping teaspoons into skillet. Cook until golden brown on one side, turn until cooked through adding butter as needed. Serve hot with sour cream.
