CARROT CAKE 
1 1/4 c. salad oil
4 eggs
2 tsp. baking soda
2 (7 oz.) jars baby food carrots
2 c. sugar
2 c. self-rising flour
1 1/4 tsp. cinnamon
1/4 tsp. salt

Beat oil with sugar and eggs, then add dry ingredients and carrots. Mix well and pour into a 9-ounce greased and powdered pan. Bake at 350 degrees until done.

ICING:

1/2 c. butter
2 c. powdered sugar
1 c. chopped nuts
3 oz. pkg. cream cheese
1 tsp. vanilla flavoring

Beat butter and cream cheese until light, then blend in other ingredients, and pour over cake.
