SUNDOWN BAKE (Potato) 
4 Idaho potatoes
6 slices bacon
2 c. sliced mushrooms
1/2 c. chopped green pepper
3 tbsp. milk
1 egg
2 tbsp. butter
1 tsp. salt
Cheese sauce

While potatoes are baking, fry bacon in large skillet until brown, drain and crumble. Pour off all but 2 tbsp. bacon fat.

In same skillet, cook mushrooms and green pepper until mushrooms are just tender; remove and reserve. When potatoes are cooked, cut slice from top of each. Carefully scoop out potato without breaking skin, mash potato in large bowl. Beat in milk, egg, butter and salt. Stir in crumbled bacon, mushrooms and green pepper. Pile potato mixture in shells and heat 25-30 minutes in 350 degree oven. Serve with cheese sauce.
