POLKA DOT POTATO BAKE
1 lb. ground beef
1 tsp. sugar
1/2 tsp. garlic salt
1/4 tsp. pepper
1/2 c. shredded cheese
2 cans (8 oz.) tomato sauce with tomato bits
1 (12 oz.) can whole kernel corn with sweet peppers
1/2 c. chopped onion
1/2 tsp. salt
1/2 tsp. oregano
2 c. mashed potatoes

In a skillet, cook beef, stirring until browned. Add tomato sauce, corn, onions and seasonings. Heat and pour into a shallow baking dish. Next, drop mounds of the mashed potatoes on top of the above mixture. Then, sprinkle the shredded cheese over the potatoes. Bake at 375 degrees for 15 minutes or until cheese melts. (If the mashed potatoes require heating, you may need to bake the casserole a little longer.)

My mother made this for dinner when my dad would have to work. As kids, we loved it! It's an American version of Shepherd's Pie. It is a comfort food that I still crave at times but now I sauté fresh corn, onions and green peppers instead of using canned.
