POTATO PIZZA 
Instant Idaho mashed potatoes for 10 servings
2 lg. eggs, lightly beaten
1 1/2 c. broccoli florets
1 med. size red pepper, sliced
1/2 c. scallions, chopped
2 c. Cheddar cheese, shredded

Prepare spuds according to directions, omitting milk. Stir in eggs. Spread spuds in a lightly greased 12 inch pizza pan. Bake in preheated oven, 400 degrees, 25 minutes. Remove from oven, lower heat to 350 degrees. Arrange broccoli on potato crust. Sprinkle with cheese. Bake 20 minutes until cheese melts and vegetables are tender. Let stand 10 minutes before serving. Serves 6.
