PINEAPPLE AU GRATIN 
2 lg. cans pineapple (unsweetened) drained chunks or tidbits
2 c. sharp Cheddar cheese, grated (1 c. Cheddar, 1 c. Velveeta spread)
3/4 c. sugar
1/4 c. flour
3 tbsp. juice
6 tbsp. flour
1 stick soy butter, melted
1 pkg. Ritz crackers (1 c. crumbled)

Mix first four ingredients. Place in a casserole dish. Spread cracker crumbs over top and pour melted butter over crumbs. Bake 350 degree oven 20-30 minutes. Serves 8-12.
