BLUE CHEESE SALAD 
1 lb. lettuce or mixed greens, shredded
1 lb. head Napa cabbage (celery cabbage), shredded, discard bottom 2 inches
1/2 lb. blue cheese, crumbled
1/3 c. cider vinegar
1/4 tsp. dry mustard
1 tsp. celery seeds
1/4 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. white pepper
2 tbsp. sugar
1/4 c. minced white onion
3/4 c. vegetable oil

In a large bowl, toss together the cabbage, greens, and blue cheese. Cover and chill for an hour.

In the meantime, in a small bowl, whisk together the remaining ingredients, adding the oil last. Chill, covered, for 45 minutes. Combine the cabbage and greens and the dressing and toss until well combined. Serves 8-10.
