MEXICAN CASSEROLE 
1 tbsp. oil
1/2 c. onion
2 cloves minced garlic
1 lb. ground beef
1 (28 oz.) can stewed tomatoes
1 pkg. taco seasoning
1 (15 oz.) bag cheese chips (Doritos, etc.)
1/2 lb. mozzarella cheese
2 c. plain yogurt (or sour cream)
1/2 c. shredded cheddar cheese

1. Brown garlic, onions and meat in oil.

2. Add tomatoes and taco seasoning. Simmer 10 minutes.

3. Grease 13 x 9 inch pan. Layer 1/2 of the chips on the bottom. Add meat, mozzarella and yogurt. Top with remaining chips.

4. Cover and bake at 350 degrees for 30 minutes.

5. Uncover - sprinkle cheddar on top and return to oven until cheese is melted.

6. Let stand 5 minutes before serving.
