POTATO SALAD 
10-12 med. potatoes (new potatoes are best)
6-8 boiled eggs, cooled and chopped
1 med. red onion, chopped fine
1 c. mayonnaise
1 tbsp. mustard
Salt and pepper to taste
1-1 1/2 c. dill pickles, chopped

Boil potatoes with skins on until done but not mushy. Cool. Remove skins from potatoes and cut into chunks. Add onion, pickles, salt and pepper, mayonnaise, and mustard.

Toss lightly. Do not stir. More mayonnaise may be added depending on how creamy you like it. Always use real mayonnaise and not Miracle Whip.
