POTATO SALAD 
2 1/2 lb. red potatoes
2 lg. tomatoes
Hellmann's mayonnaise
Salt & pepper
4 hard boiled eggs
2-3 scallions
Dried chopped chives

Boil potatoes in skins until cooked and set aside. Chop tomatoes and scallions; mix together in a bowl. Chop eggs. Remove the skins from the potatoes and cut into bite-size cubes.

Mix everything together in a large bowl with mayonnaise, a sprinkling of chives and salt and pepper to taste. Refrigerate. Best if left overnight.
