SCALLOPED POTATOES (Microwave) 
3 1/2 - 4 c. thinly sliced white potatoes
2 tbsp. minced onion
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk

Place butter in 4 cup measuring cup. Melt in microwave for 1/2 minute on high. Blend in flour and seasonings. Add milk and cook on high 8-10 minutes, stirring every 3 minutes. Layer half of potatoes, onion and sauce in 2 quart greased casserole. Repeat layers and cover dish. Cook 17-19 minutes on high, stirring after 10 minutes. Remove from oven and let stand 5 minutes. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
