EMPANADITAS 
2 pie pastries (favorite)
1 lb. dried peaches or apricots
1 c. water
1/4 tsp. ground coriander
2 1/2 c. sugar
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 c. raisins

Place fruit in saucepan; cover with water. Cook at medium heat until fruit is soft, almost mushy. More water may need to be added. Puree cooked fruit in blender. Add remaining ingredients and mix. Roll dough to 1/4 inch thickness; cut into circles 3 inches in diameter. Place spoonful of fruit in center; fold and crimp. Bake at 450 degrees for 10 to 12 minutes. 6 to 9 dozen.
